We are grateful to have a farm out by Petrofka Bridge along the North Saskatchewan River south of Blaine Lake.  We are always wondering how people cook our beef and we are thankful for Sara’s submission of her:  Sara’s Mouth-Watering Meatloaf Recipe using Reban Farms Beef.  Please give it a try.

SARA’S MOUTH-WATERING MEATLOAF RECIPE

Prepare yourself for a savoury and satisfying meatloaf that will make your taste buds dance.

Ingredients:

  • 6 lbs Reban Farms ground beef
  • 6 tbsp Worcestershire sauce
  • 2 cans of fire-roasted tomatoes
  • 3 pieces of dry bread
  • Big pinch of dry Italian herbs
  • 4 tsp steak seasoning
  • 2 tsp Greek seasoning
  • 2 tsp garlic powder
  • 4 eggs
  • 4 stalks of celery, finely diced
  • 1 onion, finely diced
  • 1 shallot, finely diced
  • 1 tbsp butter
  • 1 can Italian herb-stewed tomatoes
  • 4 tbsp tomato paste
  • 2 tbsp ketchup
  • Mozzarella cheese
  • Parsley for garnish

Instructions:

Preheat oven to 375°F.

Add 3 pieces of dry bread to a mixer and add a big pinch of dry Italian herbs. Mix until breadcrumbs form.

Melt 2 tbsp of butter in a frying pan and sauté 4 finely diced stalks of celery, 1 finely diced onion, and 1 finely diced shallot for about 5 minutes until tender.

In a large bowl, combine 6 lbs of Reban Farms ground beef, 4 tbsp of Worcestershire sauce, 2 cans of fire-roasted tomatoes, the seasoned breadcrumbs, 4 tsp of steak seasoning, 2 tsp of Greek seasoning, 2 tsp of garlic powder, 4 eggs, and the sautéed celery and onions. Mix well.

Form the beef mixture into a loaf and place on a baking sheet lined with foil. Put a smaller greased baking sheet or pizza sheet with holes on top (the holes allow it to cook evenly).

Bake the meatloaf for approximately 1 hour or until the internal temperature reaches 160°F.

While the meatloaf cooks, prepare the tomato sauce. In a blender, combine 1 can of Italian herb-stewed tomatoes, 4 tbsp of tomato paste, 2 tbsp of ketchup, and 2 tbsp of Worcestershire sauce.

Once the meatloaf is cooked, remove it from the oven and pour the tomato sauce over the top. Sprinkle mozzarella cheese on top of the tomato sauce and return the meatloaf to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly. Garnish with fresh parsley and serve Sara’s Mouth-watering meatloaf using Reban Farms Ground Beef!
